How To Make Vegan Chocolate Cake

Eating vegan is anything but a piece of cake. Eggs, milk, and butter are in everything. At times it can seem that everything delicious and everything healthy are at odds with each other. Eating vegan becomes even harder on special events. Since so many of the sweet treats we love to eat are contaminated with animal products. Here’s one recipe that you can trust and it tastes even better than it looks. The secret ingredient — Avocados.

Avocados are famous for being full of good fat but did you know this healthy fat has a name? Oleic acid is an unsaturated fat in avocados that have been shown to lower cholesterol. Some studies have even gone so far as to conclude that eating avocados improve your overall health.

Cake Recipe:

3 cups all-purpose flour

5 tablespoons dark chocolate cocoa powder

2 teaspoons baking powder

2 teaspoons baking soda

1/2 teaspoon kosher salt

1/4 cup canola oil

1 ripe avocado, mashed until smooth

2 cups of water

2 tablespoons white vinegar

2 teaspoons vanilla extract

2 cups of sugar

Set the oven to 350 F. and grease and flour two 9” circular cake pans.

Whisk together all the dry ingredients except sugar in a big bowl.

Whisk all the wet ingredients together in another bowl. Once thoroughly mixed add sugar.

Add wet to dry and combine all the ingredients until smooth. Pour the batter into two cake pans, dividing it evenly. Bake the cake. At the 30 minute mark check to see if it’s finished by poking it with a toothpick. If the toothpick come out clean it’s done.

Frosting Recipe:

2 ripe avocados, mashed until smooth

2 cups confectioner’s sugar

5 tablespoons dark chocolate cocoa powder

Mix all the ingredients together until they become one solid color and consistency.

Wait 15 minutes for the cake to cool before attempting to frost. Frost the bottom layer of the cake first then frost. Place the first layer on the second layer. Finish frosting.

Voila! A delicious vegan cake perfect for birthdays and anniversaries. It’s nearly as good for you as it tastes. This is definitely a recipe to add to your vegan cookbook. The frosting is my favorite part.
